Gluten-Free Dairy-Free Apple-Upside-Down Cake Recipe

Fruit Upside Down Coffee Cake Recipe
Quick Gluten-Free, Dairy-Free, So fancy…
So quick and easy!
A lower carb, healthier alternative.

You’ll be so glad to make a gluten free
cake when you get these amazing results
so effortlessly. It’s practically goof-proof!

This bakery-looking cake is so simple to make.
Put oil and a layer of your favorite fruit in the pan.
Sprinkle the fruit perhaps with cinnamon and raw or
coconut sugar. Then add batter, and bake.
How easy is that?

When it cools enough to handle, put a plate on
the cake and flip upside down.

After my (plain-looking) chopped apple top cooled,

I  sprinkled it with chopped walnuts for added eye-appeal,

and got unexpected great taste, and * health benefits.

For the ultimate treat, top warm slices
with whipped coconut cream or ice cream!

(I love recipes like this that say: Do not Mix too much).

Batter Ingredients

1-2 cups oat flour
1/2 cup tapioca starch
1 tsp. xanthan gum
3 tsp baking powder
1/2 tsp salt
1/2 cup coconut sugar
2 eggs
1/4 cup coconut oil
1 cup any milk (or 1/2 coconut cream 1/2 water) Plus
1 tbs. vinegar. (Let this sit until a few minutes)

Optional: 3 tbs. raisins, 3 tbs. chopped walnuts,
tsp cinnamon.

Here’s how quick and easy it is to make this:

1 – Spread a greased 13″ rectangular or ring
cake pan with 3 tbs coconut oil. 

2 – Sprinkle the 3 tbs. of oil with 1/3 cup
brown sugar mixed with 1 tsp cinnamon.

3 – Top the oil/sugar with a layer of fruit. *(See fruit options)

4 – Cover the fruit layer with this simple batter.
and bake it.

My baking pan of choice for appearance is
a standard size bundt pan. 
But here I used 2
small (7″) foil ring pans.

Here I used a 13″ rectangular pan.

 

Fruit options

I sprinkled the layer of oil and sugar with 3/4 tsp cinnamon
and 3 med. (peeled, cored) apples lightly chopped in my food
processor. 

* Choose from a variety of  fruits:
Apples, pineapple, pears, peaches, 
strawberries, cherries,

blueberries, pineapple-crushed or rings. Fresh or (drained

canned or frozen).

Beat eggs. Add oil and milk. Mix with dry ingredients
until wet doughy batter forms. Do not Mix too much.
Pour this batter over your fruit base.
Bake at 425-F (or 200-C) for 20 to 30 minutes.

Rich in vitamin E, antioxidants 
and omega-3 fatty
acids to reduce inflammation and protect

your brain from developing dementia and
Alzheimer’s disease 
(walnuts even look like little
brains!).

They also have cancer-fighting compounds,
