Vegan, Gluten-Free, Dairy-Free, 1-Minute Cookies Recipe

This Vegan, Gluten-Free, Dairy-Free, 1-Minute Vanilla
Cookies Recipe is an
easy, uncomplicated, eggless
drop-cookie recipe.
Made in
a minute in your microwave or bake
in your oven. Just mix the ingredients and drop
dough onto parchment paper. 

These are soft, plain cake-like cookies which
make a great sandwich cookie or lady finger.
Fill with one of my Healthy Frostings or Drizzle
with chocolate ganache,

 


You can turn up the flavor by adding your
favorite flavors such as almond, nutmeg,
cinnamon, orange, cardamom or pumpkin spice.
Or fill cookie sandwiches with your favorite fruit
spread, or chocolate genache.

 

This is more like a batter than a dough.
So you drop it from spoons rather than roll
it out. I cut them out and decorate after they
bake and cool.

After you bake them you can cut out the centers
of half the cookies. Save the cutouts as decorative
small cookies.

Next spread a filling on the uncut half.

 

Spread uncut circles with fruit spread or
chocolate, nut butter, or coconut whipped cream.

Place second cookie with the cut-out center
on top of the solid one.


Then use the remaining cut-outs as mini-
treats 
or freeze and use as cake decorations.

 

Servings: Makes 24 cookies

15-25 Minutes

Ingredients  

1½ cups all purpose or gluten free flour
(Add ¾ tsp xanthan, omit if your blend has it)

1/4 cup any milk
1 tsp vinegar
½ cup coconut oil
¼ cup applesauce

½ cup sugar, powdered
(I grind raw sugar in my coffee grinder)
1 tsp Vanilla, or almond extract

 

 

 

How to Make Microwave Eggless Cookies

1.Mix flour, milk, vinegar, coconut oil, sugar and vanilla together.
2.Mix  to make a smooth dough.
3.Make 24 small balls and flatten with a fork.
4.Place six at a time on a microwave baking tray or lightly
greased greaseproof paper and cook at 100% for
1.5 – 2.25 minutes, depending on the size of the cookies.
5.Give the tray a half turn halfway through the cooking time.
6.Allow to cool on a wire rack.
7.Repeat with the remaining mixture.
OR OVEN BAKE:

8.Lay on parchment lined cookie sheet.
Bake at 350-F about 10 minutes.
