(replace 1 cup of butter with<br \/>\n3\/4 cup oil).<\/span><\/p>\n<p><span style=\"font-size: 18pt;\"><strong>Coconut oil is an excellent choice<\/strong> for<br \/>\ncooking, as it can <\/span><span style=\"font-size: 18pt;\">resist heat-induced damage.<\/span><\/p>\n<p><span style=\"font-size: 14pt; font-family: arial, helvetica, sans-serif;\">This way, you&#8217;re not consuming damaged, oxidized oils.<br \/>\nProcessed vegetable oils, on the other hand, such as<br \/>\nsoybean, corn, cottonseed and canola oil, produce oxidized<br \/>\ncholesterol when heated, which increases thromboxane formation \u2014<br \/>\na factor that clots your blood, as well as two toxins: cyclic aldehydes<br \/>\nand acrylamide.<\/span><\/p>\n<p><span style=\"font-size: 14pt; font-family: arial, helvetica, sans-serif;\">It&#8217;s beyond unfortunate that the American Heart Association<br \/>\n(AHA) decided to slow down much-needed progress by sending<br \/>\nout its international presidential advisory12 warning against the<br \/>\n<\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 14pt;\">use of coconut oil and butter, reiterating its old recommendation<br \/>\nto use polyunsaturated fatty acids (PUFAs) such as margarine<br \/>\nand vegetable oil instead. Overall, the AHA still recommends<br \/>\nlimiting your daily saturated fat intake to 6 percent of daily calories<br \/>\nor less, which is far below what your body needs for optimal health.<\/span><\/p>\n<p><span style=\"font-size: 14pt; font-family: arial, helvetica, sans-serif;\">This advisory, sent out in June last year, was sharply criticized by<br \/>\nmany health experts, and for good reason. For starters, the studies<br \/>\non which the advisory was based all date from the 1960s and early<br \/>\n1970s \u2014 the eras when the low-fat myth was born and grew to take<br \/>\nhold. Many studies since then have demolished and refuted the science<br \/>\nthe AHA still clings to, but none of them were included.<\/span><\/p>\n<p><span style=\"font-size: 14pt; font-family: arial, helvetica, sans-serif;\">According to Dr. Cate Shanahan,14 a family physician and author of<br \/>\n&#8220;Deep Nutrition: Why Your Genes Need Traditional Food,&#8221; the AHA&#8217;s<br \/>\nmessage &#8220;is not only false, it is dangerous,&#8221; noting that the AHA is<br \/>\nactually making false claims since none of the studies included in their<br \/>\nanalysis involved coconut oil specifically.<\/span><\/p>\n<p><span style=\"font-size: 14pt; font-family: arial, helvetica, sans-serif;\">It&#8217;s also worth noting that most of the early studies on coconut oil that<br \/>\nfound less than favorable results used partially hydrogenated coconut<br \/>\noil, not unrefined virgin coconut oil.15 Hydrogenated oil is not the same<br \/>\nas unrefined oil, even when you&#8217;re talking about something as healthy as<br \/>\ncoconut.
