You really <\/span><span style=\"font-size: 18pt;\">never need more! You can spice it<br \/>\nup to your taste. It&#8217;s so quick and easy I can make lots<br \/>\nof them, all different.<\/span><\/p>\n<p><span style=\"font-size: 18pt;\"><br \/>\nThis batter recipe makes two 6&#8243; to 8&#8243; <\/span><span style=\"font-size: 18pt;\">mug cakes<br \/>\nDepending on how full your mold is, you may get<br \/>\nan extra 6&#8243; cake or an extra ramekin.<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><strong><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">It&#8217;s as unlimited as your imagination:<\/span><\/strong><br \/>\n<strong><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Coffee Cake, Frosted Layer cake, Logs,<\/span><\/strong><br \/>\n<strong><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">even Strawberry Shortcake!<\/span><\/strong><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">I love this cake plain, or with streusel topping, or with<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">one of my <span style=\"text-decoration: underline;\"><a href=\"http:\/\/www.jmcutlery.com\/wiz\/quick-healthy-frosting-recipes\/\" target=\"_blank\" rel=\"noopener noreferrer\">healthy frosting<\/a>s<\/span>,<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><strong>OR<\/strong> as a little layer cake with fruit spread between layers.<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><strong>Or<\/strong> topped with Coconut Cream whipped cream and<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">diced strawberries. As a strawberry shortcake.<\/span><\/p>\n<p><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\"><br \/>\n<span style=\"font-size: 18pt;\">The fruit topping (pictured) is <\/span><\/span><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">made by melting<br \/>\n<span style=\"font-size: 18pt;\">2 tablespoons all-natural blueberry spread <\/span>for 10 seconds<br \/>\nor so in the Microwave and stirring.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">You can then top the fruit spread with<span style=\"color: #000000;\">\u00a0<a style=\"color: #000000;\" href=\"http:\/\/www.jmcutlery.com\/wiz\/substitutions\/\">coconut <\/a><a style=\"color: #000000;\" href=\"http:\/\/www.jmcutlery.com\/wiz\/substitutions\/\">whipped cream,<\/a><\/span><\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"> coconut flakes,\u00a0sprinkles, anything really. (This recipe makes 2 -3 cakes). <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">It\u00a0took<br \/>\n3 minutes to bake in my 1000 watt microwave.<br \/>\nYou&#8217;ll need to experiment with volume vs. cooking time.<br \/>\n(In my 900 watt it took 3.25 minutes).<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Try not to exceed 7&#8243; in diameter. It appears the microwave<br \/>\nbakes more evenly in smaller batches.<br \/>\n<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">For this to rise up and cook correctly, Do not overfill the<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">bowl or mug with batter. With leftover batter I made<br \/>\n2 single\u00a0<\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">1-minute-muffins in silicone molds.<\/span><\/p>\n<p><strong style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Step 1: Cake Ingredients<\/strong><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">(In a measuring cup, Mix 1 tbs. vinegar and 1 cup (8 oz.)<br \/>\n<\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">\u00a0 \u00a0non-dairy milk, (Yogurt or Buttermilk): to1-cup line.<\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><br \/>\nLet sit 5 minutes<\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">\u00a0until thickened).<br \/>\n1\/4 cup unsweetened Applesauce<br \/>\n<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">1 large egg (<strong>or *<\/strong>vegan Substitute)<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">2 tsp. vanilla or almond extract<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">1+1\/3 cups Oat flour<br \/>\n1\/3 cup tapioca starch\/flour<br \/>\n<\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">1\/2 tsp xanthan or guar gum. Omit if using *Flax egg.\u00a0<\/span><\/p>\n<p><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">1\/2 teaspoon baking powder<br \/>\n1\/4 teaspoon baking soda<br \/>\n1\/4 teaspoon salt<br \/>\n1\/2 cup or more sugar (raw or coconut)<\/span><\/p>\n<p><strong><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Lastly add to batter 1\/4 cup melted<br \/>\ncoconut oil,\u00a0<\/span><\/strong><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><br \/>\n<\/span><\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-2195 alignleft\" src=\"http:\/\/www.jmcutlery.com\/wiz\/wp-content\/uploads\/2017\/11\/chopped-fruit-300x233.jpg\" alt=\"\" width=\"329\" height=\"255\" srcset=\"https:\/\/www.jmcutlery.com\/wiz\/wp-content\/uploads\/2017\/11\/chopped-fruit-300x233.jpg 300w, https:\/\/www.jmcutlery.com\/wiz\/wp-content\/uploads\/2017\/11\/chopped-fruit-768x597.jpg 768w, https:\/\/www.jmcutlery.com\/wiz\/wp-content\/uploads\/2017\/11\/chopped-fruit-1024x796.jpg 1024w, https:\/\/www.jmcutlery.com\/wiz\/wp-content\/uploads\/2017\/11\/chopped-fruit-600x467.jpg 600w\" sizes=\"auto, (max-width: 329px) 100vw, 329px\" \/><\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><strong>Optional Add-ins<\/strong><\/span>:<br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Stir up to 1\/2 cup of<br \/>\nthese into batter when<br \/>\nit&#8217;s in the baking pan.<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><strong><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Optional Seasoning: Some or all<\/span><\/strong><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">1 tsp. cinnamon<br \/>\n1 tsp. cardamom<br \/>\n1 tsp. allspice<br \/>\n1\/4 tsp. nutmeg<br \/>\n1\/4 tsp. cloves<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">1 Tbs. chopped or snipped walnuts<br \/>\n1 Tbs. snipped pitted dates<br \/>\n1 Tbs. dried mixed berries\/raisins<br \/>\n1 Tbs. Chocolate chips\u00a0<\/span><\/p>\n<p><strong><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><br \/>\nThe result is\u00a0<\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">a moist fluffy flavorful cake that tastes<br \/>\naddictive yet is\u00a0<\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">healthier\u00a0than most other cakes.<\/span><\/strong><\/p>\n<p>&nbsp;<\/p>\n<p><strong><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">*IT&#8217;S IMPORTANT TO EXACTLY FOLLOW<br \/>\nTHESE INSTRUCTIONS<\/span><\/strong><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">(1) &#8211; In a large bowl, mix together flour,\u00a0 sugar, <\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">baking powder, baking soda, and salt. Set aside.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">(2) &#8211; In another bowl, microwave-safe, melt coconut <\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">oil in the microwave.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">(3) &#8211; In a separate bowl, whisk the egg, <\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">buttermilk, and vanilla extract until combined.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">(4) &#8211; Stir buttermilk mix into the dry ingredients, <\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><strong>Lastly, followed by the oil,<\/strong> until no lumps remain.<br \/>\n<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">The batter should be thick. If it&#8217;s runny, gradually<\/span><span style=\"font-size: 18pt;\"><br \/>\n<\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"> add up to 1\/4 cup more flour.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">(5) &#8211; Stir in your add-ins if any.<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"> Do not overmix sprinkles, or fresh berries they<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"> will bleed their color.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Divide the batter evenly between two 6-inch<br \/>\n<\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">diameter microwave safe bakeware. I&#8217;ve used<br \/>\n<\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Pyrex food savers (without their plastic lids).<br \/>\nThe cakes can be stored in them.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><strong>Step 6: Cook!<\/strong><\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Insert a disk of baking parchment in each greased<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">microwave-safe ramekin mug or bowl.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Fill up to 3\/4 full, 3 large. 4&#8243; diameter deep\u00a0 <strong>mugs or bowls.<br \/>\n<\/strong>Microwave full power 90 seconds. each. Then check.<br \/>\n<strong>OR\u00a0grease<\/strong> two or three shallower bowls (6&#8243; diameter)<br \/>\nMicrowave full power for 2.25 mins. each. T<\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">hen check.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">The cake in my 1000 Watt rises double the batter height<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">in 3 minutes 25 seconds and\u00a0gave a good result as shown<br \/>\nin my photos.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">The cakes tend to shrink away from the well-greased sides<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">when done.<\/span><\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><strong>*NOTES:<br \/>\n<\/strong>Somehow it mattered that the oil got stirred in last. The one time<br \/>\nI forgot, the cake was not successful.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Cooking them individually is best.\u00a0Too little time, and the<br \/>\ncake will be wet on the outside. It&#8217;s OK. Give it another 10<br \/>\n<\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">or 15 seconds, check again.\u00a0 Avoid giving too much time.<br \/>\nIt will\u00a0become really dry and crumbly. It should look slightly<br \/>\nmoist.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Once it&#8217;s cooked,\u00a0<\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">pop the cake out onto a plate.
