It makes a world of difference in the lightness<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">and texture. And that&#8217;s how this rises so high and is so moist<br \/>\nand fluffy for a gluten-free bread.<br \/>\n<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><br \/>\nThis is definitely the best gluten free sandwich bread<br \/>\nI&#8217;ve\u00a0ever tasted or made. It works great for grilled<br \/>\nsandwiches or panini&#8217;s,even for French Toast. I made<br \/>\nthis on the quick cycle, effortlessly in the bread machine.<\/span><\/p>\n<p><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\"><br \/>\n<strong>To put the ingredients in the bread machine pan<\/strong><br \/>\nadd them in <\/span><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">the order they&#8217;re listed.<br \/>\n(You add the flour last. Stir in<br \/>\n\u00bd cup Almond Flour<br \/>\n(<em>I use that here to substitute Milk Powder<\/em>)<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><strong><br \/>\nIn another medium bowl Mix<br \/>\n<\/strong><em>\u00bd cup ground flaxseed flour<\/em><br \/>\n3 Tbs. coconut sugar (to taste) needed to<br \/>\nactivate yeast.<br \/>\n1 &#8211; 2 more tbs. maple syrup or honey <em>(If you<br \/>\nprefer <\/em><em>sweeter bread)<\/em><br \/>\n<em><br \/>\n<\/em><\/span><strong><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><br \/>\nIn a separate large bowl whisk<\/span><\/strong><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><br \/>\n2 cups oat flour<br \/>\n3\/4 cup tapioca or arrowroot flour<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"> 1\u00bd tsp salt<br \/>\n1\u00bd tsp xanthan or guar gum)\u00a0<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">\u00a0 \u00a0 \u00a0(Pour all dry into bread pan after wet).<br \/>\nLAST Add 2\u00bc tsp yeast to a well on top of flour.<\/span><\/p>\n<p><strong><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><br \/>\nInstructions For Bread Machine <\/span><\/strong><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Add eggs,<br \/>\nwater, <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Almond flour or milk powder, sugar,<br \/>\noil and vinegar to bread pan. In that order.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">In a large bowl whisk flours, xanthan gum and<br \/>\nsalt together thoroughly. Pour into bread pan.<br \/>\n<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Make a well in the top of the flour mound.<br \/>\nPour in yeast.<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"> Select a one-rise or quick cycle I use express<br \/>\nbake (58 minutes).<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><strong>NOTE: It should be a dense batter, <\/strong>but not as thick<br \/>\nas dough. <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">If it&#8217;s too thick to drop from a spoon, add<br \/>\nwarm water 1\/3 cup at a time, until it can drop.<strong><br \/>\n<\/strong><\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><br \/>\n<strong>Or, bake it in the oven.<\/strong><br \/>\nPreheat oven to 3.50\u00b0 <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Blend ingredients<br \/>\nthoroughly for about 8 minutes, preferably in<br \/>\na stand mixer with dough hooks.<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><br \/>\nPour into parchment lined loaf pan and bake<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">until toothpick comes out clean (about 60 &#8211; <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">90 minutes).<br \/>\nCheck it when it appears brown enough.\u00a0<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><br \/>\n<strong>After it&#8217;s cooled in the fridge,<br \/>\n<\/strong>you can make <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">up to 16 lovely thin slices that can be<br \/>\ntoasted and that don&#8217;t fall apart. <span style=\"font-size: 18pt;\">It is so healthy because<br \/>\nit&#8217;s loaded with omega 3 from<\/span><\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"> flax seed.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><strong>I used ground golden flax seed<\/strong><\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">which gives it a delicious slightly nutty flavor and<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">pleasing color.<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">(I grind the flaxseeds with a few pulses in my coffee<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">grinder). You can buy them already ground, but they<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">stay fresh longer in the fridge if ground as needed.<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><strong>Notes<\/strong><\/span><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-1502\" src=\"http:\/\/www.jmcutlery.com\/wiz\/wp-content\/uploads\/2017\/12\/bread-and-pan-300x227.jpg\" alt=\"\" width=\"366\" height=\"277\" \/><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">I recommend buying only &#8220;gum-free, additive free,&#8221;<br \/>\nnon-dairy milk in BPA-free cans. The ingredients should<br \/>\nsay &#8220;coconut, and water,&#8221; (nothing else). Many such<br \/>\nbrand choices are available on Amazon.\u00a0<em>(Not found in<\/em><br \/>\n<em>containers or in the refrigerated bins in stores).<br \/>\n<\/em><br \/>\n*Dairy-free milk Should not contain gums (stabilizers)<br \/>\nor additives. They can spoil your recipes!<\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">\u00a0Don&#8217;t add<br \/>\nxanthan gum if your plant milk already has &#8216;stabilizer&#8217;<\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><br \/>\nin it and you&#8217;re stuck having to use it. You don&#8217;t know<br \/>\nthe quantity of gums they add to the milk.\u00a0<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><strong>An alternative ingredient: Sometimes<\/strong><br \/>\nI grind 1\/4 a cup of each seed in my <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">dedicated<br \/>\ncoffee grinder\/seed <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">grinder instead of using flaxseed.<br \/>\n<\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">The loaf is just as high and light. Too much liquid is the usual culprit<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">if the<\/span> <span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">bread comes out too wet or soggy.
