Lightly spoon them into the measuring<br \/>\ncup (I like to shake my hand back and forth a little, like you\u2019d do with a<br \/>\nhair drier) until the measuring cup is overflowing, then drag the flat backside<br \/>\nof a knife across the top to level it off.<\/span><\/p>\n<p><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">Do\u00a0<strong>NOT<\/strong>\u00a0scoop the flours, cocoa powder, or oats directly out of the container<\/span><br \/>\n<span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\"> with the measuring cup or pack them in. This results in\u00a0<strong>1.5 times more<\/strong><\/span><br \/>\n<span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\"> than is required in a recipe, which dries out your baked goods and turns<\/span><br \/>\n<span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\"> them crumbly. Not good!<\/span><\/p>\n<p><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\"><strong>Leaveners<\/strong><br \/>\nWith baking powder and baking soda, lightly fluff the leavener<br \/>\nwith a measuring spoon before scooping it out and leveling with<br \/>\na knife. Some containers have a flat edge built in\u2014that works too!<\/span><\/p>\n<p><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\"><strong>Sugars<\/strong><br \/>\nFor white sugar, use the same spoon-and-level technique<br \/>\ndescribed for flours. With brown sugar, lightly pack it into the measuring<br \/>\ncup using a fork or spoon until the cup is completely filled and level<br \/>\n(unless the recipe states otherwise).
