It\u2019s hard to believe this recipe uses no grains.<br \/>\nThe cookies <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">are soft and moist. Whisk to combine.<br \/>\n<\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Add vinegar <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">and vanilla and egg, whisk until smooth and<br \/>\ncreamy.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Using a silicone spatula, mix in the dry ingredients<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">until well combined. Wet<\/span><br \/>\n<span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">your fingers with water to help prevent sticking <\/span><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">while<br \/>\nyou work with the dough.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Scoop the cookie dough (about 2 inch balls of dough<br \/>\nper cookie) <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">and place 1-1\/2 inches apart on the baking<br \/>\nsheets.<br \/>\nYou can choose to Bake for 10-12 <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">minutes, at <strong>350\u00baF<br \/>\n<\/strong>until golden and the center is set. <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Let cool 5 minutes<br \/>\nthen transfer to a wire rack to continue cooling.<br \/>\n<strong>OR&#8230;<\/strong><\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Bake until the cookies are firm to the touch around the <\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">edges, <strong>about 30 minutes at 250\u00baF.<\/strong><\/span><\/p>\n<p><span style=\"font-size: 18pt;\"><br \/>\nFor a more crispy and crunchy cookie, you can bake\u00a0<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">them up to 45 minutes at 250\u00baF. At the low <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">temperature,<br \/>\nthese cookies will not turn golden brown <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">around the<br \/>\nedges, so don&#8217;t be alarmed by their pale <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">color.<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">These cookies tend to get softer when stored in an<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">airtight container at room temperature, so I highly<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">recommend you store them in the fridge or freezer.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><br \/>\nIf you are in a hurry, you can bake them for<br \/>\njust 8-12 minutes at 350\u00baF, but then you&#8217;ll risk the<br \/>\nacrylamide formation, a carcinogen formed from<br \/>\nhigh heat on certain nuts. That is a recent discovery<br \/>\nabout high heat cooking.<\/span><\/p>\n<p><strong><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Recipe Notes:<\/span><\/strong><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">They may last indefinitely in the freezer, but they rarely <\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">last more than a week in our home before we eat them <\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">all. They have a very crunchy texture when served <\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">directly from the freezer, which is what I <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">prefer!<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">Almond flour, or *alternatives, makes these moist and have a<br \/>\ngood flavor. In my opinion, it is superior <\/span><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">to other gluten-free<br \/>\nflours for cookies because of nutritional <\/span><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">values, availability,<br \/>\nand ease of use.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Almond flour is also grain-free.
