font-size: 18pt;\">buttermilk. Meanwhile, add all dry ingredients<br \/>\nto a large mixing <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">bowl and stir with a whisk.<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Now add the wet ingredients and stir with a<br \/>\nspatula <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">or whisk to <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">combine. Do not overmix the batter. Gently, fold in the blueberries.<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><strong><br \/>\nOptional: <\/strong>Sprinkle on Streusel topping.<br \/>\n<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">This recipe is enough streusel topping for a single batch of muffins.<br \/>\n(To make enough streusel to top a 9-inch pie, you&#8217;d just double the recipe).<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">(1\/2 cup) 65 grams oat flour flour<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">(about 1\/4 cup packed) coconut sugar <\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">4 tbsp. cold semi-solid coconut oil<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">1\/2 tsp. ground cinnamon<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Combine all the ingredients in a food processor and pulse<br \/>\na few seconds until crumbly. Alternately, you can mash the<br \/>\ningredients together in a bowl using a fork, or just smoosh<br \/>\neverything together with a fork. Don&#8217;t use your fingers, since<br \/>\nthe warmth of your fingers will soften the oil<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Divide the batter among the wells of the muffin pan.<br \/>\nI had enough <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">batter to make 8-9 muffins.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Bake for 25-30 minutes or until you spot cracks on top of the muffins. <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">You can also make a toothpick test. Insert<br \/>\nthe toothpick into the center <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">of a muffin. It should<br \/>\ncome out fairly clean (it&#8217;s ok if the toothpick is <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">crumbly<br \/>\nbut it shouldn&#8217;t come out wet).<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><br \/>\nLet the muffins cool and enjoy! They are delicious warm, but<br \/>\nkeep the extras in the fridge. Store leftovers in an airtight<br \/>\ncontainer <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">in the refrigerator for up to 5-6 days or freeze for<br \/>\nup to 3 months.
