All-purpose, whole wheat, gluten-free,<br \/>\ncocoa <\/span><\/strong><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\"><strong>powder, and even oats<\/strong> are all the same.<br \/>\nLightly spoon them <\/span><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">into the measuring cup (I like<br \/>\nto shake my hand back and\u00a0<\/span><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">forth a little, like you\u2019d<br \/>\ndo with a hair drier) until the <\/span><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">measuring cup is<br \/>\noverflowing, then drag the flat backside of <\/span><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">a knife<br \/>\nacross the top to level it off.<br \/>\n<\/span><\/p>\n<p><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\"><strong>Do NOT scoop the flours, cocoa powder, or oats<br \/>\ndirectly out<\/strong> <\/span><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">of the container with the measuring cup<br \/>\nor pack them in. <\/span><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">This results in 1.5 times more than<br \/>\nis required in a recipe, <\/span><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">which dries out your baked<br \/>\ngoods and turns them crumbly.<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-2761\" src=\"http:\/\/www.jmcutlery.com\/wiz\/wp-content\/uploads\/2018\/07\/weigh-measure-scale-300x246.jpg\" alt=\"\" width=\"300\" height=\"246\" \/><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\"><strong>Leaveners.<\/strong> With baking powder and baking soda,<br \/>\nlightly <\/span><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">fluff the leavener with a measuring spoon<br \/>\nbefore scooping it <\/span><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">out and leveling with a knife.<br \/>\nSome containers have a flat <\/span><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">edge built in\u2014that<br \/>\nworks too!<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\"><strong>Sugars.<\/strong> For white sugar, use the same spoon-and-level <\/span><br \/>\n<span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">technique described for flours. With brown sugar, lightly <\/span><br \/>\n<span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">pack it into the measuring cup using a fork or spoon until <\/span><br \/>\n<span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">the cup is completely filled and level (unless the recipe <\/span><br \/>\n<span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">states otherwise). You should avoid<br \/>\nusing a butter knife <\/span><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">because the blade is duller<br \/>\nand you won\u2019t carve off as <\/span><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">accurate of an amount.<\/span><\/p>\n<p><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\"><strong>With tub-style butter, margarine, <\/strong><strong>and<br \/>\nshortening,<\/strong> press the necessary quantity into<br \/>\na <\/span><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">measuring spoon or cup, and level with a knife.<\/span><\/p>\n<p><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\"><strong>Remove your ingredients<\/strong> <strong>with a <\/strong><\/span><br \/>\n<span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\"><strong>spatula<\/strong> to include whatever clings to the<\/span><br \/>\n<span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">walls of cup or bowl<\/span><\/p>\n<p><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\"><strong>Liquids. (In <\/span><br \/>\n<span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">science-speak, it\u2019s called a meniscus!) You want to make <\/span><br \/>\n<span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">sure the center of the liquid is even with the rim of the cup <\/span><br \/>\n<span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">for the most accurate measurement.<\/span><\/p>\n<p><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">You can also use a clear measuring cup and the markings <\/span><br \/>\n<span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">on its side instead.
