It&#8217;s easy to mix in the bread machine<br \/>\non the dough cycle. This dough was wonderful to work with.<br \/>\nThe picture is beautiful challah made by me using this recipe.<br \/>\nIt looks like something out of a magazine.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Divide up the mound of dough according to<br \/>\nwhat size loaves you desire. This recipe will make<br \/>\none very large family size loaf (about 8 slices)<br \/>\nor half that or 1\/3 of that.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">You need to know that this dough <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">wants to spread<br \/>\nand flatten. So I <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">keep it firm but flexible, not too wet.<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">It also helps to make your braids in <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">parchment-lined<br \/>\nloaf pans, rather than laying them on cookie sheets.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">You can try making it totally gluten free by changing<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">the flour to 2-1\/3 cups of oat flour and 1-1\/3 cups tapioca<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">starch\/flour. It should work as well but I haven&#8217;t had a<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">chance to try it.<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-2421\" src=\"https:\/\/www.jmcutlery.com\/wiz\/wp-content\/uploads\/2018\/06\/knead-dough_640-300x211.jpg\" alt=\"\" width=\"367\" height=\"258\" srcset=\"https:\/\/www.jmcutlery.com\/wiz\/wp-content\/uploads\/2018\/06\/knead-dough_640-300x211.jpg 300w, https:\/\/www.jmcutlery.com\/wiz\/wp-content\/uploads\/2018\/06\/knead-dough_640-600x422.jpg 600w, https:\/\/www.jmcutlery.com\/wiz\/wp-content\/uploads\/2018\/06\/knead-dough_640.jpg 640w\" sizes=\"auto, (max-width: 367px) 100vw, 367px\" \/><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">INGREDIENTS\u00a0<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">3\u20444 cup water<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">2 eggs\u00a0<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">1\u20443 cup oil<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">1 teaspoon salt<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">1\u20442 cup raw or coconut sugar<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">3 2\u20443 cups spelt flour<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">4 teaspoons instant yeast<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">1 tbs. ground flax seeds (optional)<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">raisins (optional).<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">DIRECTIONS<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><br \/>\nPut the ingredients into your bread machine in<br \/>\nthe order recommended by the manufacturer.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Select &#8216;dough cycle&#8217;.<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">In my bread machine, I am able to add in raisins<br \/>\nafter the first mixing &#8211; it beeps. Check your machine <\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">for directions on adding optional ingredients in after<br \/>\nstarting\u00a0the dough cycle.<br \/>\n<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">When taking out dough, if too sticky, roll in a<br \/>\nthin dusting of rice flour to\u00a0ease shaping.<br \/>\nBe careful to keep dough moist. (I leave the hot water in while I bake).<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Preheat oven to 350\u00b0F.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">If you want them to shine, brush with a beaten egg<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">and a tbs. of water just before baking.
