Mix and &lt;\/span&gt;&lt;\/p&gt;\n&lt;p&gt;&lt;span style=&quot;font-family: arial, helvetica, sans-serif; font-size: 18pt;&quot;&gt;(this formula is for 1\/4 cup.)\"><strong><span style=\"text-decoration: underline;\">Buttermilk Substitute<\/span><\/strong><\/span><\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">put 1 tsp. vinegar in a measuring cup.<br \/>\nFill to 1\/4 cup line with coconut cream or<br \/>\nnon-dairy milk, let sit 5-10 minutes until thickened. .<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><strong>DRY Ingredients<br \/>\n<\/strong>1-3\/4 cups oat flour<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">1\/2 cup tapioca (starch\/flour)<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">1 tsp. xanthan gum<em>\u00a0(optional, but helps it bind)<\/em><\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">1 teaspoon baking soda<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">1 teaspoon baking powder<br \/>\n1\/4 teaspoon salt<br \/>\n<strong><br \/>\nOPTIONAL: 1\/4 tsp nutmeg,<br \/>\n1 tsp. ground cinnamon<br \/>\nIf you wish<\/strong><br \/>\n(up to 1\/2 cup coconut sugar)<\/span><\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-4389\" src=\"https:\/\/www.jmcutlery.com\/wiz\/wp-content\/uploads\/2019\/11\/muffins1-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/www.jmcutlery.com\/wiz\/wp-content\/uploads\/2019\/11\/muffins1-300x225.jpg 300w, https:\/\/www.jmcutlery.com\/wiz\/wp-content\/uploads\/2019\/11\/muffins1-768x576.jpg 768w, https:\/\/www.jmcutlery.com\/wiz\/wp-content\/uploads\/2019\/11\/muffins1-1024x768.jpg 1024w, https:\/\/www.jmcutlery.com\/wiz\/wp-content\/uploads\/2019\/11\/muffins1-600x450.jpg 600w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/p>\n<p>&nbsp;<\/p>\n<p><strong><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Instructions<\/span><\/strong><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">(Usually, banana gives enough sweetness).<br \/>\n<strong><br \/>\nSkip this if not adding sugar.<br \/>\nIf adding suga<\/strong><strong>r:<\/strong><br \/>\n<\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">In a large bowl, beat sugar and oil together with an<br \/>\nelectric mixer until light and fluffy and well-combined.<br \/>\n<\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">To beat by hand, use a deep bowl, tilted slightly, and a<br \/>\nwooden spoon.<\/span><\/p>\n<p><strong><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">*To Add Extra Lightness<br \/>\nTo Muffins, Cakes, and Breads<br \/>\n<\/span><\/strong><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Separate the eggs.\u00a0\u00a0<\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Whip the egg whites. <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Fold them in at the<br \/>\nend of the batter-making process. <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">This will add more lightness<br \/>\nto the muffins, especially if <\/span><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">you&#8217;re using oat flour.<br \/>\n<\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><br \/>\n<strong>In a large bowl, <\/strong>whisk wet ingredients together first,<strong>\u00a0<\/strong><\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">and set<br \/>\naside for 10 minutes.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><strong>Preheat oven to 400\u00ba F,<\/strong> (175 degrees C)<br \/>\nGrease a muffin tin or line a muffin tin with oiled paper liners.<br \/>\n<\/span><\/p>\n<p><strong><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">In a new bowl<br \/>\n<\/span><\/strong><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Stir together all remaining <strong>dry ingredients. <\/strong>I divide this in<br \/>\nhalf to include 1\/2 cup chopped dried fruit in 6 wells,<br \/>\nand 1\/2 cup chocolate chips in the other 6 wells.<br \/>\n(Add 1\/4 tsp cinnamon if you wish).<strong><br \/>\n<\/strong><\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">\u00a0<strong>Pour dry into wet<\/strong>,<br \/>\nStir <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">until just evenly mixed (thick but not dough). Don&#8217;t overmix.<br \/>\nSpoon the batter into the greased wells or muffin liners, filling<br \/>\neach 3\/4 full. If batter is runny enough to pour, add more oat flour,<br \/>\na tablespoon-at-a-time, until thickened.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><strong>The only problem<\/strong> I ever encountered with muffins is that they<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">shrink or sink. It doesn&#8217;t harm them, but I don&#8217;t like how they<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">look. They do that when they have too much liquid.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><strong>Place muffin tins on the center rack<\/strong>. <strong>Turn oven down to 350\u00baF<\/strong><br \/>\nBake19-20 minutes or <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">until muffins have domed and a toothpick<br \/>\ninserted into the center of a <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">muffin comes out mostly clean.<br \/>\n<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Let cool. Probiotics come from fermented foods and prebiotics <\/span><br \/>\n<span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">come from fiber.
