Beat in vanilla. Combine the<br \/>\nflour, tapioca starch, <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">xanthan gum and salt; gradually<br \/>\nadd to creamed mixture and mix <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">well. Stir in walnuts.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Cover and refrigerate for 1 hour or until easy to handle.<br \/>\nIf your snowball cookies flatten, it&#8217;s likely that they<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">weren&#8217;t chilled for long enough.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Chilling allows the oil to solidify, which in turn helps the<br \/>\ncookies maintain their shape while baking.\u00a0 <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Shape into<br \/>\n1-inch. balls; place 2 inches apart on ungreased baking<br \/>\nsheets.<br \/>\n<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Preheat oven to 400\u00b0<br \/>\nBake at 400\u00b0 for 9-11 minutes or until set. Cool on pans for 2 <\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">minutes before removing to wire racks. Remove from the oven and <\/span><br \/>\n<span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">let the cookies cool on the cookie sheet for 10 minutes before <\/span><br \/>\n<span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">transferring them to a wire rack to cool completely. Store the <\/span><br \/>\n<span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">cookies in an airtight container to prevent them from drying <\/span><br \/>\n<span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">out.
