But<br \/>\n<\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">a well-meaning neighbor was <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">moving and had a 2 lb.<br \/>\nbag of frozen cranberries to give away. Naturally, being the<br \/>\nneighbor who bakes the most, I (was offered them first. It was<br \/>\n<\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">the middle of summer in South Florida, so I wasn&#8217;t planning any<br \/>\nbig baking project. I couldn&#8217;t spare room in my freezer for the<br \/>\ncranberries. But I couldn&#8217;t see them going to waste.<br \/>\n<\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><br \/>\n<\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">I happened to have saved one recipe<\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"> that called for 3 cups of<br \/>\ncranberries! That recipe was neither gluten-free nor dairy-free<br \/>\nYou can never be sure a first-time recipe will be successful.<br \/>\n<\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">I couldn&#8217;t resist putting those cranberries to good use.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">I had to gamble a can of coconut milk and 6 eggs to<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">attempt to convert it this conventional recipe to gluten-free<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">and dairy-free. I told myself at least the cranberries were <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">free!\u00a0<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Well cranberries are not just for holidays any more!<br \/>\nNot after this <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">touched my taste buds! Tapioca starch<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">3 tbs. Grand Marnier orange liqueur (or orange juice), OR<br \/>\n(<strong>I used \u00bd tbs. orange extract<\/strong> + 2 \u00bd tbs. water) Plus<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">1\u00bd teaspoons vanilla extract<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Pinch of salt<\/span><br \/>\n<span style=\"font-size: 18pt;\"><span style=\"font-family: arial, helvetica, sans-serif;\">2\u00bd cups fresh or frozen cranberries, Pulsed slightly in<br \/>\nthe processor.<\/span><\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Confectioners&#8217; sugar, for dusting when serving.<\/span><\/p>\n<p><span style=\"font-size: 18pt;\"><span style=\"font-family: arial, helvetica, sans-serif;\"><strong>Directions<br \/>\n<\/strong>Position a rack in the center of the oven. Preheat to 425\u00ba F.<br \/>\nOil the bottom and sides of an 11-inch ceramic or glass<br \/>\noven-dish.<br \/>\nIn a small bowl, Toss the cranberries with \u00bc cup<br \/>\nplus 1 tbs. of the sugar.<br \/>\nSpread the sugared cranberries in the bottom of the<br \/>\ngreased baking dish. Bake until the mixture starts to<br \/>\ncaramelize, about 20 minutes.<\/span><\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Remove from the oven and reduce the temperature<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">to 375\u00ba F.<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Combine the eggs, egg yolks, 1\/2 cup sugar, the Coconut<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">milk, flour, Grand Marnier, vanilla and salt in a blender.<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><br \/>\nI used my food processor (half the batter at a time).<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">It was too small for all the ingredients in one spin.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Pulse until the sugar has dissolved and the batter is<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">smooth, about 1 minute.
