font-size: 18pt;\">My tasters agreed with me that this cake belongs<br \/>\n<\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">plain with a <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">round cake pans, one 9\u00d713-inch,<br \/>\nor three 6-inch round pans* (with vegan butter <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">or coconut oil)<br \/>\nand dust with gluten-free flour. Shake out excess and set aside.<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><br \/>\nIn a liquid measuring cup, measure out dairy-free milk and add<br \/>\nvinegar. Let set a <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">few minutes. Then add applesauce and vanilla.<br \/>\nWhisk\/stir to combine. Add dry <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">ingredients to a large mixing bowl<br \/>\nand whisk to combine. Then add wet ingredients <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">to the dry ingredients<br \/>\nand mix until well incorporated and no large lumps remain. <\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><br \/>\nThe batter should be thick but pourable. Add more almond flour<br \/>\nif too <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">wet or dairy-free milk if too thick. Divide batter evenly<br \/>\nbetween prepared cake pans <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">and bake on a center rack for 35-40<br \/>\nminutes or until a toothpick inserted into the <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">center comes out clean<br \/>\nand the edges and surface appear golden brown.<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><br \/>\nLet cool 15 minutes in the cake pans. To remove from pans, run a<br \/>\ndull knife around <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">the edge of the pans to loosen the cakes. Then<br \/>\nplace a plate or cooling rack on top <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">and quickly invert. Let cool<br \/>\ncompletely (preferably overnight or at least 6 hours on a <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">wire rack)<br \/>\nbefore frosting. Frost with coconut whipped cream and berries for<br \/>\na lighter <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">application (see inspiration here), Frosting will overpower<br \/>\nthe delicate delicious combination of vanilla and almond. <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Store cake<br \/>\ncovered at room temperature for 2-3 <\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">days or in the refrigerator for 3-4 days.
