In a small bowl, whisk together the almond milk, <\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">eggs, maple syrup, and vanilla.<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><br \/>\nPour the wet ingredients into the bowl with the dry ingredients and stir. <\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">If your batter is very thick, stir in more almond milk If it&#8217;s too thin, <\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">sprinkle in a touch more almond flour. <\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><br \/>\nHeat a non-stick skillet over medium-low heat. Brush the pan with a <\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">little olive oil and use a \u00bc-cup measuring cup to pour the batter onto <\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">the pan. (Note: these are more delicate than regular flour pancakes so <\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">it&#8217;s important to make them small).<\/span><\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Cook the pancakes for 1 to 2 minutes per side, turning the heat to low <\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">as needed so that the middles cook without burning the outsides. Serve with maple syrup.<br \/>\n<strong>Notes:<\/strong><\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">*Super-fine blanched almond flour is best for this recipe.<br \/>\nFor homemade almond <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">flour <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><em>(grind slivered blanched almonds)<\/em>\u00a0<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">*Gently spoon in and level flour when measuring<br \/>\nflour so that the <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">flour in your measuring cup doesn\u2019t get too packed<br \/>\ndown.
