It will be lumpy.<\/span><\/p>\n<p><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">In a medium-sized bowl, place the flour blend, sugar,<br \/>\ncocoa powder and salt, and whisk to combine well.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Add 1\/2 cup (4 fl. oz.) of the milk, and then the egg<br \/>\nyolks, whisking to combine after <\/span><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">each addition.<br \/>\nSet the mixture aside.<\/span><\/p>\n<p><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">In a medium-sized heavy-bottom saucepan, place the<br \/>\nremaining <\/span><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">2 1\/2 cups (20 fl. oz.) milk and bring to a<br \/>\nsimmer over medium-high heat. <\/span><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">Once the milk reaches a<br \/>\nsimmer, remove the saucepan from the heat.<\/span><\/p>\n<p><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">Add the hot milk to the bowl with the egg and chocolate<br \/>\nmixture in a slow <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">trickle, whisking constantly to combine.<\/span><\/p>\n<p><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">The purpose of adding the hot milk slowly is by bringing the<br \/>\negg yolks <\/span><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">up to temperature slowly you avoid stiffening them.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Once all of the hot milk has been added, pour the whole<br \/>\nmixture back into the saucepan <\/span><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">and return to the heat.<\/span><br \/>\n<span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">Cook, whisking constantly, (2 to 3 minutes) over medium-high<br \/>\nheat until thickened <\/span><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">enough that the whisk leaves a visible trail<br \/>\nin the pudding as you <\/span><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">whisk it.<\/span><br \/>\n<span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\"><br \/>\nAdd the softened gelatin to the pan, and stir until the gelatin is<br \/>\n<\/span><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">melted. Remove the pan from the heat, and add the vanilla<br \/>\nand <\/span><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">chopped chocolate, and stir until the chocolate is melted<br \/>\nand the <\/span><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">pudding is smooth.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif;\"><span style=\"font-size: 18pt;\">Allow the filling to cool for about 5 minutes.
