It&#8217;s faster than you can pre-heat your<br \/>\noven, faster than going to a bakery! It&#8217;s frosted<br \/>\nto your liking. I prefer making this recipe as 2 layers.<br \/>\n<\/span><\/span><br \/>\nYou&#8217;ve heard it before, &#8220;If you can&#8217;t take the heat&#8230;&#8221;<br \/>\nI say, &#8220;bake it in the microwave.&#8221; Some people are<br \/>\nsuspicious of cooking food in a microwave.<br \/>\nBut I can&#8217;t say that applies to cake and muffins.<\/span><\/strong><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">There are times when my oven is already occupied,<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">or on<\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"> a hot summer day in FL, when I want a fresh-baked<br \/>\n<\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">cake, I turn to my trusty microwave recipes.<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">They can be baked in the oven but it will take about<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">30 minutes and heat up the kitchen.<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><strong>In this instance,<\/strong> I was away on vacation and got a call<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">from a friend who was going to be passing where we<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">were staying. We were so happy they could stop by<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">and visit. I wanted a fresh cake quick! They loved<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">this one. Allowing for tastes I divided the batter in half<br \/>\nand ma<\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">de two 6&#8243; cakes, one chocolate chip and one<br \/>\ncinnamon-raisin.<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-7143\" src=\"https:\/\/www.jmcutlery.com\/wiz\/wp-content\/uploads\/2021\/10\/microwave-cinnamon-honey-cake-300x225.jpg\" alt=\"\" width=\"440\" height=\"330\" \/><\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">This was the basic microwave cake, with an added<br \/>\ntsp. of cinnamon and 1\/2 cup of raisins in the batter.<br \/>\nWhen it cooled, I drizzled on some honey straight from<br \/>\nthe bottle as a glaze, and I sprinkled it with a half &amp; half<br \/>\nblend of a 1\/2 tbs. cinnamon and 1\/2 tbs. coconut sugar.<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Since my husband only likes chocolate chips or<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">chocolate frosting, I filled his cake with 1\/2 a cup<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">of chocolate chips. It was love at first bite!<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><strong>I was amazed<\/strong> at how easily, quickly, evenly and<br \/>\nfluffy, this healthy Cake bakes up in the microwave.<br \/>\nIt is so worth making. It is moist, fluffy, and generous in<br \/>\nheight made in a 6&#8243; silicone pan. You can pile up 2 or<br \/>\n3 layers. You will know when the cake is done when it\u2019s<br \/>\nfirm to the touch in the middle and it pulls away slightly<br \/>\nfrom the sides of the pan. Do not over cook. Test it with<br \/>\na toothpick.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><strong>Microwave cakes keep for a few days<\/strong> if wrapped in<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">plastic and kept in the fridge in an airtight container.<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">But they last longer if kept in the freezer.<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">If you aren&#8217;t going to use it right away. Defrost the<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">plain cake and then frost it just before using..<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><br \/>\n<strong>For Easy Chocolate Microwave Cake:<\/strong><\/span><strong><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">\u00a0<\/span><\/strong><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 14pt;\"><span style=\"font-size: 18pt;\"><strong>OR To make sheet cakes<\/strong>, you may want to use square<br \/>\npans, and place 2 cakes side-by side. (High speed will stop<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">this mix from separating).<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Swiftly mix in the buttermilk, vanilla, and for chocolate<br \/>\ncake, add melted <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">chocolate, and mix in quickly.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><strong>Lastly by hand, fold in flour mixture<\/strong><\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">to the wet ingredients. using a large spoon\u00a0<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Divide the batter evenly between 3 silicone cake molds or<br \/>\nglass microwave-safe glass or ceramic dishes.<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">One layer at a time, microwave each cake for roughly 2 minutes<br \/>\nto 2 minutes 20 seconds. (this cooking time is based on my<br \/>\nmicrowave which is 1200 Watts so your cook time may vary).<br \/>\nIt can take the1000 watts microwave for 3-4 minutes to cook.<br \/>\nAdd more time if needed at 20 second intervals and check<br \/>\nmiddle with a toothpick. The toothpick should come out clean.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">You will know when the cake is done when it&#8217;s firm to the touch in<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">the middle and it pulls away from the sides of the pan. Take care<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">not to overcook or they will dry out. Remove from the microwave<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">and allow to cool in the pan before turning out on a cooling rack.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">The cake will bubble and puff in the microwave just as it would in<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">the oven. Let the cake sit for one or two<br \/>\nminutes after baking, giving time for the heat to spread<br \/>\nthroughout. Do not remove from the microwave right away.<br \/>\nUse a potholder to lift it out.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Serve and enjoy.
