In another shallow bowl, <\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">combine sugar and cinnamon. Grease muffin wells or line with muffin<br \/>\npapers.\u00a0<\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Blend the non-dairy milk and vinegar and let it sit (about<br \/>\n5 minutes). <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Thoroughly blend the milk mixture, banana, vanilla,\u00a0<\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">and<br \/>\ncoconut sugar\u00a0<\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">in a processor or blender on high until well-blended.<\/span><\/span><\/div>\n<div><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">In a large mixing bowl, stir together the flour and baking powder.<\/span><\/div>\n<div><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><br \/>\nAdd the wet mixture to the dry and stir to combine. <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Gently fold in<br \/>\nthe berries or chocolate chips. I divide the batter in half and add<br \/>\nchips to half and blueberries to the other half.<\/span><\/span><\/div>\n<div><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><br \/>\nSpoon into a muffin pan lined with paper liners or lightly oiled.<\/span><\/div>\n<div><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Sprinkle the tops with coconut sugar. <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Bake for 24-34 minutes<br \/>\n(depending on size) at 350F.<\/span><\/div>\n<div><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Let them cool for at least 10 minutes before removing from the\u00a0<\/span><\/div>\n<div>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">pan.
