Sautee celery, carrots,<br \/>\n(optional onion\/scallions), garlic, parsley, thyme, and<br \/>\nbay leaves. Cook over high heat for 5 to 10 minutes,<br \/>\nstirring frequently. Add salt and water and bring<br \/>\nto a boil.
