Vinegar Let rest until thicker.<br \/>\n\u00bd cup (2oz\/57g) cocoa powder<br \/>\n1 cup oat flour or almond flour<br \/>\n\u00bd cup tapioca<br \/>\n1\u00bd teaspoons baking powder<br \/>\n1 teaspoon baking soda<br \/>\n\u00bd teaspoon salt<br \/>\n3\/4 cup (coconut oil)<br \/>\n3\/4 cup coconut sugar<br \/>\n3 eggs, beaten*<br \/>\n1\u00bd teaspoons vanilla extract<br \/>\n\u00bc cup (1.5oz\/43g) chocolate, melted<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><strong>Instructions<\/strong><br \/>\nTake note that you <strong>never use a<\/strong> <strong><em>metal<\/em><\/strong> baking pan for<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">microwave baking.\u202fGrease 3 (6-inch) round silicone cake<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">molds (or any microwave safe dishes) and line the bottoms<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">with a round piece of parchment paper. \u00a0Use a shallow dish<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">for the best results. Don&#8217;t exceed the size because you<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">won&#8217;t get even heating across a large surface in a<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">microwave.<br \/>\n<\/span><\/p>\n<p><strong><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">Sieve Dry ingredients together <\/span><\/strong><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">flour, baking powder,<br \/>\nbaking soda and salt. <\/span><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">and set aside.<\/span><\/p>\n<p><strong><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">WET Ingredients<\/span><\/strong><br \/>\n<span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">Using an electric hand mixer or a stand mixer,<\/span><br \/>\n<span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">cream the oil and sugar together on high speed<\/span><br \/>\n<span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">until light and fluffy.<\/span><\/p>\n<p><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">Slowly add in the eggs and beat on high speed.<br \/>\n(High speed will stop <\/span><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">this mix from separating.)<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Swiftly mix in the buttermilk, vanilla, and melted<br \/>\nchocolate and mix in quickly.<\/span><\/p>\n<p><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">Lastly by hand, fold in flour mixture into the wet<\/span><br \/>\n<span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">ingredients using a large spoon.<br \/>\n<\/span><br \/>\n<span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\"><strong>One layer at a time,<\/strong> microwave each cake for<br \/>\nroughly <\/span><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">2 minutes to 2 minutes 20 seconds. (This<br \/>\ncooking time <\/span><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">is based on my microwave which is<br \/>\n1200 Watts so your <\/span><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">cook time may vary). 1000<br \/>\nwatts cook the cake in the <\/span><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">microwave for 3 to 4<br \/>\nminutes.<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">\u00a0<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><strong><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-2547\" src=\"https:\/\/www.jmcutlery.com\/wiz\/wp-content\/uploads\/2018\/07\/batter-chocolate-chip-300x225.jpg\" alt=\"\" width=\"459\" height=\"344\" srcset=\"https:\/\/www.jmcutlery.com\/wiz\/wp-content\/uploads\/2018\/07\/batter-chocolate-chip-300x225.jpg 300w, https:\/\/www.jmcutlery.com\/wiz\/wp-content\/uploads\/2018\/07\/batter-chocolate-chip-600x450.jpg 600w, https:\/\/www.jmcutlery.com\/wiz\/wp-content\/uploads\/2018\/07\/batter-chocolate-chip.jpg 640w\" sizes=\"auto, (max-width: 459px) 100vw, 459px\" \/><\/strong><\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-size: 18pt;\">The cake will bubble and puff in the microwave<\/span><br \/>\n<span style=\"font-size: 18pt;\">just as it would in the oven. Check to see if the cake is<\/span><br \/>\n<span style=\"font-size: 18pt;\">already baked by sticking a toothpick down into the center.<\/span><br \/>\n<span style=\"font-size: 18pt;\">The toothpick should come out clean.<\/span><\/p>\n<p><span style=\"font-size: 18pt;\">cake back in the microwave and cook it in 30 second to<\/span><br \/>\n<span style=\"font-size: 18pt;\">1-minute additions until done.\u202fMicrowaves often don\u2019t<\/span><br \/>\n<span style=\"font-size: 18pt;\">spread heat as evenly as ovens do.<\/span><\/p>\n<p><span style=\"font-size: 18pt;\">Do not remove from the microwave right away.<\/span><br \/>\n<span style=\"font-size: 18pt;\">Let the cake sit for one or two minutes after baking,<\/span><br \/>\n<span style=\"font-size: 18pt;\">giving time.<\/span><\/p>\n<p><span style=\"font-size: 18pt;\">You can top it with frosting and decorate on your<\/span><br \/>\n<span style=\"font-size: 18pt;\">own when it cools completely..<\/span><\/p>\n<p><span style=\"font-size: 18pt;\">Take care not to overcook or they will dry out. If it pulls away<\/span><br \/>\n<span style=\"font-size: 18pt;\">from the sides of the pan, Touch it in the middle. When soft<\/span><br \/>\n<span style=\"font-size: 18pt;\">but firm Remove from the microwave and allow to cool in the<\/span><br \/>\n<span style=\"font-size: 18pt;\">pan before turning out on a cooling rack.<\/span><\/p>\n<p><strong><span style=\"font-size: 18pt;\">To decorate the cake:<\/span><\/strong><br \/>\n<span style=\"font-size: 18pt;\">Cool completely. It also freezes really well for up to 4 weeks.<br \/>\nSee my no\u00a0 sweetener needed <a title=\"naturally-sweetened-frosting\/\" href=\"https:\/\/www.jmcutlery.com\/wiz\/quick-dairy-free-gluten-free-naturally-sweetened-frosting\/\" target=\"_blank\" rel=\"noopener noreferrer\">healthy frosting.<\/a><\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-size: 18pt;\">Because you are making a chocolate cake, add 1\/3 cup of<\/span><br \/>\n<span style=\"font-size: 18pt;\">cocoa powder. (To make a vanilla cake, add another teaspoon<\/span><br \/>\n<span style=\"font-size: 18pt;\">of vanilla extract). Mix. Stir the ingredients well with a fork or use<\/span><br \/>\n<span style=\"font-size: 18pt;\">an electric mixer to mix for about 4-5 minutes or until it becomes<\/span><br \/>\n<span style=\"font-size: 18pt;\">smooth. Spoon the cake batter into a microwave dish. Take note<\/span><br \/>\n<span style=\"font-size: 18pt;\">that you never use a metal baking pan for this microwave baking.<\/span><br \/>\n<span style=\"font-size: 18pt;\">Use a shallow dish for the best results.
