This is is one of those gluten-free<br \/>\nwonders! To achieve high domes, fill muffin wells to<br \/>\nthe top.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">The flavor is addictive. You won&#8217;t want to disturb it<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">with any frosting, except to top with powdered sugar<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">for decoration or with butter or whipped cream cheese<br \/>\ndue to old-time tradition.<br \/>\n<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><br \/>\n<\/span><strong><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Ingredients:<\/span><\/strong><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">1\/2 cup milk<br \/>\n1\/2 tbs. vinegar <\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">(<em>sit 5 minutes until buttermilk)<\/em><\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">1\/2 cup coconut oil<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">1\/2 cup unsulphured molasses <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">(not blackstrap)<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">3\/4 cup (100g) packed brown sugar (light or dark)<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">1 large egg, at room temperature<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">1\/4 cup (120ml) milk, at room temperature*<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">2 cups (334g) almond flour<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">3\/4 cup tapioca<\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">\u00a0(spooned &amp; leveled)<br \/>\n1 tsp guar or xanthan gum or ground chia or flaxseed<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">1-1\/2 tsps. baking soda<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">1\/4 tsp salt<br \/>\n<\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><br \/>\n1-1\/2 teaspoons ground cinnamon<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">2 tsps. ground ginger<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">1\/2 tsp ground cloves<\/span><\/p>\n<p><span style=\"font-size: 18pt;\"><strong><br \/>\nOptional:<\/strong><\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><a href=\"https:\/\/www.jmcutlery.com\/wiz\/quick-dairy-free-gluten-free-naturally-sweetened-frosting\/\" target=\"_blank\" rel=\"noopener\">Easy healthy topping choices.<\/a><\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Tip: If you add a streusel topping before baking<br \/>\nyou won&#8217;t need to <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">wait for muffins to completely<br \/>\ncool to add topping. They&#8217;re ready to eat while<br \/>\nstill warm.<\/span><\/p>\n<p><strong><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><br \/>\nInstructions:<\/span><\/strong><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Preheat oven to 425\u00b0F (218\u00b0C).<br \/>\nBake in a preheated oven at 425-F.<br \/>\nBake 5 minutes,<br \/>\nThen reduce heat to 350-F.<\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><br \/>\nGenerously grease or spray a 12-count muffin pan <\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">or line with muffin liners. <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Set aside.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">In a large microwave-safe bowl, heat the coconut<br \/>\noil and <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">molasses together in the microwave on high<br \/>\nfor about 1 minute. If you use dark brown sugar instead<br \/>\nof light, the muffins will be very dark. I prefer that.<br \/>\n<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Then whisk until thoroughly mixed together. Set aside<br \/>\nto cool slightly <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">as you mix the dry ingredients together.<\/p>\n<p><\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">In a larger bowl, whisk the flour, baking soda, salt,<br \/>\ncinnamon, ginger, <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">and cloves together.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><br \/>\nInto the large bowl of molasses\/coconut oil mixture, <\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">now whisk in the brown sugar, egg, buttermilk, and milk <\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">until all wet ingredients are combined.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><br \/>\nPour wet ingredients into dry ingredients and whisk <\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">only until just combined. It should pour off<br \/>\na spoon. Do not over-mix.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">If batter a little lumpy it&#8217;s OK.<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Add-ins in this recipe would possibly sink, so I<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">don&#8217;t recommend them. If you want to include<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">add-ins such as raisins, I&#8217;d sprinkle some across<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">the tops and let them sink in while baking.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">You can top these muffins before or after baking<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">with these <a href=\"https:\/\/www.jmcutlery.com\/wiz\/quick-dairy-free-gluten-free-naturally-sweetened-frosting\/\" target=\"_blank\" rel=\"noopener\">Easy healthy topping choices.<\/a><\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><br \/>\nDivide the batter among the prepared muffin pan,<br \/>\nfilling all the way to the tops of 12 wells for high domes.<br \/>\nIf you want smaller muffins, divide the batter evenly among<br \/>\n18 muffin wells. I use non-stick silicone sets of 6 wells.<br \/>\nI set them on cookie sheets.<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><br \/>\nSprinkle with coarse sugar (for added crunch, if desired.!), <\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Bake at 425\u00b0F for 5 minutes, then, keeping the muffins <\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">in the oven, reduce the oven temperature to 350\u00b0F (177\u00b0C)<br \/>\nand <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">continue to bake for 35 to 40 minutes or until the tops<br \/>\nare cracked and <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">centers are set.
