font-size: 18pt;\">sold online at *Amazon.<br \/>\nI do not reap any <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">financial benefit from<br \/>\nmentioning this.<br \/>\nI was so thrilled with the results that I<br \/>\nfelt compelled to post this.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">This cake is quick and simple to make from<br \/>\nscratch using everyday ingredients that you<br \/>\nprobably have.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">But in this instance I used my own gluten-free<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">blend of flour (2 cups Almond or oat flour<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">3\/4 cup tapioca).<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Though it looks like cake, the combination<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">of eggs and almond flour resulted similar in<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">taste and texture to a firm pumpkin pie.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">(That was also said by a commenter on<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Amazon who used the cake flour recipe<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">that&#8217;s included with the mold.)<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><strong><span style=\"font-family: arial, helvetica, sans-serif; font-size: 14pt;\">This is my first attempt at making this&#8230;came out great!<\/span><\/strong><\/p>\n<p><strong><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">2 cups Almond or oat flour<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">3\/4 cup tapioca<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">2 tsps. ground ginger<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">1 tsp cinnamon<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">1\/4 tsp. cloves<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">1\/4 tsp. nutmeg<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">1 tsp. salt<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">2 tsp.baking powder<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><br \/>\n<strong>In another Larger bowl, Combine:<\/strong><br \/>\n1 cup sugar<br \/>\n2\/3 cup dark brown sugar firmly packed<br \/>\n3\/4 cup slightly firm coconut oil<br \/>\n4 large eggs<br \/>\n1tsp. vanilla<br \/>\n1-1\/4 cups any milk<br \/>\n<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><strong><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Instructions<\/span><\/strong><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Preheat oven to 325-F <\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Grease and flour the mold and set it aside.<br \/>\nThen, <strong>in the\u00a0 Medium bowl,<\/strong>\u00a0Whisk together<br \/>\nthe flour and spices.<br \/>\n<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><strong>In the other, Larger bowl, <\/strong>Mix sugars<br \/>\nwith semi soft coconut oil <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">and beat until<br \/>\nlight and fluffy. Scrape the bowl often.<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\"><br \/>\nNext, Beat in eggs one at a time. Beat<br \/>\nafter <\/span><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">each addition. Then Blend in vanilla.<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">On low speed, blend flour into sugar mixture <\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">alternately with milk in the larger bowl.<\/span><\/p>\n<p><span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">Spoon batter into prepared pan.<\/span><br \/>\n<span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">Place mold on cookie sheet in the oven.<\/span><br \/>\n<span style=\"font-size: 18pt; font-family: arial, helvetica, sans-serif;\">Bake 55 to 65 minutes,<\/span><\/p>\n<p><span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">Test for doneness with a toothpick wherever<\/span><br \/>\n<span style=\"font-family: arial, helvetica, sans-serif; font-size: 18pt;\">the batter may still be uncooked.
