2-Minute Gluten-Free Vegan Microwave Chocolate Chip Cookies

2-MINUTE CHOCOLATE CHIP COOKIES
FROM THE MICROWAVE
! (or oven)

Gluten-Free, Dairy-Free,  

I love this easy recipe. (It can be oven-baked) but
is microwaved here. It yielded about 20 nice
sized cookies. These are dairy-free and gluten-
free.
No need to heat up the kitchen. Use the oven
for more important  food.

 

As you probably already know, you can easily
cook lots of yummy things
without using an oven.
Cookies are among these things.

Today I will show you one of my favorite microwave
chocolate chip cookies recipes.

You can make these cookies in just a couple of
minutes and
these are just really tasty cookies.
They’re soft and chewy but firm up a bit in the
fridge.

The batter should look like this:

 

You simply make this gooey batter.
Line a big flat microwave safe plate with
parchment and drop batter from a teaspoon
using a spatuala.
That helps keep your fingers clean.

 

INGREDIENTS:

1/2 cup chocolate chips
*Flour – 1¼ cup almond flour 
*Flour – 2/3 cup oat flour 
1/4 cup + 1 tablespoon Coconut Sugar 
¼ teaspoon baking soda – 
A pinch of salt
1/4 cup (85 g) of coconut oil (or avocado or olive)
(or 6 Tbsp grass-fed Butter melted)

+1/8 cup applesauce

1 egg 

 2 teaspoons Vanilla or almond extract – or
sweet red wine

 

METHOD:

Mix melted 1/4 cup of oil, 1/8 cup applesauce,
an egg, and 2 teaspoons vanilla extract in a bowl.

Add 1/4 cup + 1 tablespoon sugar and stir well.
(I used low glycemic raw coconut sugar,
so the cookies are browner than usual).

 

Get all dry ingredients ready in another bowl. These are:
Flour – 1/2 cup almond flour, 1/4 cup oat flour,
¼ teaspoon baking soda, and a pinch of salt.

Put the wet ingredients into this dry mixture and
keep mixing until smooth enough.

Note:
The batter is sensitive to heat and humidity. I
had to bump up the flours to give the batter
enough thickness so the cookies would hold
their shape on the baking plate.


Next add your chocolate chips to the batter and it’s

time to bake the cookies!

Put a piece of baking paper over a plate and place cookies
onto the paper, 5 or 6 at a time.

Put the plate into the microwave for 1 to 2 minutes (the baking
time can be different; my microwave has got 900 W).

 

 

When the baking time is out, your cookies will still be soft.
They will harden up when they cool down.

 

The baking time may vary depending on the microwave
power and the number of cookies on the plate. For instance,
6 cookies bake for 1 to 2.5 minute at 900 W, while 3 cookies
may be ready sooner.

You can also bake these cookies in the oven at 350-F
(175 С) for 10-12 minutes.
