Quick and Easy, Dairy-Free Gluten-Free
Versatile Basic Yellow Layer Cakes
The fastest Bundt cake you’ll ever
make!

 

Baking a cake from scratch cannot be easier than this, and so
yummy, why would you 
want a store-bought cake ever again?
Just keep these handy everyday ingredients in a special place,
and you’ll have fresh baked cake from scratch on a moment’s
notice.

 

 

Pretty as a picture results without a complex streusel
topping. It turns out lovely if you sprinkle chopped
walnuts across the top of the batter before baking.

In this picture,sprinkled chopped walnuts over the
batter 
and when baked and cool I sprinkled a blend
of 1/2 a cup coconut sugar
(powdered in my coffee
grinder) with a 
teaspoon of cinnamon.

Then, to avoid heavy sugared frosting, I drizzled the
cooled cake with my healthy chocolate ganache
.

Notice the sugar. (The original recipe called for triple this
amount of sugar!) Notice the oil. Here I used half the oil
listed in the original recipe, and sub’d 1/4 cup of oil with
1/4 cup of applesauce (or mashed banana).

 

 

 

 

 

 

 

 


Basic Yellow Layer Cakes
14 servings  Total time 35 minutes

Recipe
 Ingredients

1-1/2 cups oat flour and
1/2 cup tapioca

1½ tsp xanthan gum

2-1/2 tsp baking powder
pinch salt

2 eggs

1/4 cup sugar

1/4 cup unsweetened applesauce or mashed banana

1/4 cup oil

2/3 cup milk

1 tsp vanilla


NOTE:
To Add Extra Lightness To Gluten-Free.
Muffins, Cakes, and Breads:
Separate the eggs. Whip the egg whites.
Fold them in as the end of batter-making.

Instructions

Preheat oven to 375.

Into a large bowl, sift flour, baking powder, and salt.
Measure and sift again
Mix oil, sugar, and beaten egg yolk,
Alternately add
Flour and milk to egg mixture. Then add flavoring.
Whip the egg whites.
Fold them in as the end of batter-making.

OPTIONAL:
Add in whatever you wish: 1/2 a cup of
Raisins, dates, cranberries, chocolate chips,
or berries.

Pour batter into 2 greased 8″ or 9″ cake pans,
or one 11″ x 13″ or medium  Bundt pan. You can
divide the batter into 2 different pans to make 2
different cakes with different add-ins or seasoning.

Bake for 20-25 minutes

FINISHISHING TOUCHES
Sprinkle chopped nuts and cinnamon-sugar on top.
Or when cool, Drizzle with any of my healthy frosting recipes.

Or Upside-Down Bundt  Toppings:
line a greased Bundt pan with 1-1/2 tbs. of coconut oil
mixed with 1-1/2 tbs. coconut sugar and optional tsp. of
cinnamon and chopped nuts, Sprinkle with a sparse layer
of chopped cherries, blueberries, or apples.
