Gluten-Free Cake Recipe

Made from a Mold
Made of Almond or Oat Flour
A perfect house warming
or a holiday gift to all.
It’s just as cozy and tasty as it smells.
“Gingerbread House” cake mold by
Nordic Ware is sold online at *Amazon.
I do not reap any financial benefit from
mentioning this.
I was so thrilled with the results that I
felt compelled to post this.
This cake is quick and simple to make from
scratch using everyday ingredients that you
probably have.
But in this instance I used my own gluten-free
blend of flour (2 cups Almond or oat flour
3/4 cup tapioca).
Though it looks like cake, the combination
of eggs and almond flour resulted similar in
taste and texture to a firm pumpkin pie.
(That was also said by a commenter on
Amazon who used the cake flour recipe
that’s included with the mold.)
This is my first attempt at making this…came out great!

Ingredients:
In a Medium bowl, combine:
2 cups Almond or oat flour
3/4 cup tapioca
2 tsps. ground ginger
1 tsp cinnamon
1/4 tsp. cloves
1/4 tsp. nutmeg
1 tsp. salt
2 tsp.baking powder
In another Larger bowl, Combine:
1 cup sugar
2/3 cup dark brown sugar firmly packed
3/4 cup slightly firm coconut oil
4 large eggs
1tsp. vanilla
1-1/4 cups any milk
Instructions
Preheat oven to 325-F
Grease and flour the mold and set it aside.
Then, in the Medium bowl, Whisk together
the flour and spices.
In the other, Larger bowl, Mix sugars
with semi soft coconut oil and beat until
light and fluffy. Scrape the bowl often.
Next, Beat in eggs one at a time. Beat
after each addition. Then Blend in vanilla.
On low speed, blend flour into sugar mixture
alternately with milk in the larger bowl.
Spoon batter into prepared pan.
Place mold on cookie sheet in the oven.
Bake 55 to 65 minutes,
Test for doneness with a toothpick wherever
the batter may still be uncooked. Cool in pan
for ten minutes.
Remove from the pan onto cooling rack
until completely cool.
Can then be dusted with powdered sugar
or decorated.
