Chocolate Swirl Marble Cake – So quick and
easy to make a big impressive-looking Cake!

Ingredients:

Dry

1-1/2 cups oat flour                    

1/2 cup tapioca                  
1/2 tsp xanthan gum                
1 tsp baking powder    
1/2 tsp baking soda
1/2 tsp salt

3/4 cup coconut sugar (Minus 3 tbs.)
(3 tbs. used in chocolate swirl).

Wet

1/2 cup coconut oil
2 eggs
1 tsp vanilla

1 cup soy milk+
1 tbs. vinegar Let stand 5 min. until thick 
    Chocolate Swirl Mixture:
Mix 3 tbs. coconut sugar,
4 tbs. cocoa  5 tbs. hot water
Optional topping for loaf-pan style: 
2/3 cup chopped nuts, 3 tbs. coconut sugar,
1 tsp cinnamon
Sprinkle on loaf before baking.
 

Preheat oven to 325-F

Place layer of greased parchment in a loaf pan or grease
a tube pan . 

Beat oil with sugar. then beat in all cake ingredients on low.
Beat on med. for 2 mins.
In a 
well greased 9″ tube pan. Sprinkle optional chopped
nuts, sugar  
and cinnamon mixture in pan. Pour in batter.

Chocolate Swirl Mixture:
Mix 3 tbs. coconut sugar,
4 tbs. cocoa  5 tbs. hot water
Pour chocolate mixture on top of batter.*
Place blade straight down. Swirl in, up, over,
down, with blade. Do not stir in.
Bake 50 mins. 
 

Cool pan on rack 20 mins. Run a silicone spatula around edges.
Put plate
on top. Turn over onto plate.
