Gluten-Free, Dairy-Free, Cherry Apple Pie

Cherry-Apple Pie For intimate occasions. The quickest
easiest apple pie you’ll ever make! It totally satisfies the
urge for apple pie.

 

 



I bought the 2.5″ deep tin on Amazon.  I had only 2 leftover
apples and to use them up I made a 6″ pie enhanced with
frozen tart cherries, because I was out of raisins.You
will love this combo.Cherries never tasted so good as
baked in this pie. You may have some crust batter left over.
which you can use on fruit in a ramekin.

      Ingredients
2 cups of apples sliced small
Optional: 1/2 cup frozen cherries,
berries, raisins or more apples

1 tsp cinnamon
1 tbs. sugar
¾ cup coconut oil, melted 
1/2 cup sugar
2/3 cup oat flour
1/3 tapioca (starch/flour)
(a healthier ‘resistant’ starch made from cassava root)
1 lg egg
vegan use a Flax Egg ‘Mix 1 tbs. ground flax seed with
4 tbs. hot water. Let it rest 5 minutes until glutinous.’
pinch of salt

 


      Instructions
Preheat oven to 350F degrees.
Put apples and cherries in greased, parchment lined, deep-dish pie
plate and sprinkle with cinnamon and one tablespoon of sugar.
In a bowl, mix melted coconut oil, one cup of sugar, flour, and
xanthan gum (if used).Blend in unbeaten egg and pinch
of salt. Mix well and pour over apples.This mixture will be
thick, so you might have to spread it with a spatula to
cover all the apples.) Sprinkle more cinnamon over top.
Bake for 45 minutes.

I call this no-fuss Gluten-Free Quick Apple Pie
a Crustless Apple Pie because you don’t actually
make or use a crust. In this recipe, you create a
batter and pour the batter over the apples. When
baked, the batter seeps down and becomes both
a top and bottom crust.
