It’s great on its own as a side – and with add-ins, chickpeas or
black beans, for a delicious high-protein and meatless main dish
that meat eaters will love too.
The recipe works any time you need a basic brown gravy
for
potatoes, green beans, vegan meatloaf or burger patties
covered in thick homemade gravy.

 

What makes a sauce or gravy delicious is the seasoning.
Some people prefer a “change of seasons” and some like
it to be the same season all year-round.

The gravy is good for potatoes or sweet potatoes, biscuits &
gravy, over rice, quinoa, roasted veggies, or toast.

 

For gluten-free keto gravy, I thicken with 2/3 oat flour 1/3 tapioca.
stirred into 1/2 cup vegetable broth. You do need to first blend
your thickener with liquid. Then heat and stir until it thickens.

As for the type of mushrooms, it’s up to you. Try a mix of button
mushrooms, shiitakes, Portobello, oyster, maitake,
cremini, porcini,
baby Bella, or whatever looks interesting. Add
some chopped
carrots along with the mushrooms.

 

Mushrooms are good for arthritis patients as they are rich in
nutrients and they retard inflammation. They are the richest
vegetarian source of vitamin D, which is important in maintaining
healthy bones, muscles, and immunity.

 

Mushroom Gravy – Just 6 Ingredients!
Total Time: 20 min. Yield: 1-1/4 cups 

 

Ingredients
8 ounces sliced mushrooms
*2 1/2 tsp minced garlic
1/2 tsp salt
1/2 cup *vegetable broth 
3 tsp. oat flour
1 tsp tapioca

optional: 1/4 tsp dried thyme,
or any dried seasonings you like.
1/3 cup diced onion
1/3 cup diced carrots

*vegetable broth (I simply simmer a cup of chopped
baby carrots with
chopped celery and some salt and
white
pepper until the carrots are fork tender.)

 

Instructions
Sauté mushrooms, minced garlic, salt, and optional
thyme. in 2 tsp oil or water
on med. heat in a thick bottom pan, until it starts
to brown.
Stir
occasionally. The mushrooms will get watery.
Let cook until pan starts
to look dry again.
Whisk broth into the flour, stirring as needed, and cook
until it thickens.
