Vegan Vanilla Bean Berry Muffins Gluten Free Dairy Free
Vegan Vanilla Bean Berry Muffins

Makes 6 to 8 muffins.- Bake time 19 minutes

This recipe does well with Blackberries, Blueberries,
Raspberries, and Cranberries. You’ll notice the
extra sugar in the ingredients. That’s for berries
that are too tart.
This is an excuse to have some sweet tasty
cake for breakfast.
It’s a great way to start the day. Oat flour helps
you to feel full longer. Berries are full of healthy
anti-inflammatory, anti-oxidants.

 



Wet Ingredients
1 tbs. apple cider vinegar or white vinegar
1 cup milk of choice
2 tsp vanilla bean paste (vanilla extract will also work)

3 tbs. coconut oil

Dry Ingredients

1-1/2 cups oat flour
1/2 cup tapioca flour
1/2 plus 1/8 tsp salt
2 tsp baking powder
1/2 cup coconut sugar (or up to 2 more tbs.)  
1/2 tsp xanthan gum
1 cup fresh blackberries, crushed 
Optional: 1/8 tsp. cardamom, or nutmeg.
1/2 cup shredded coconut
METHOD:
Preheat your oven to 350 F. Line a muffin tin with muffin liners.
In a mixing bowl, whisk together first 4 ingredients. In a big 
separate bowl, stir together all other ingredients except 
blackberries.
Pour wet into dry, Stir until just evenly mixed, then 
add the
blackberries. Gently fold in, but only until evenly mixed. 
It’s very important to not over-stir. Spoon batter evenly into the 
muffin tins and bake 19 minutes. Muffins should look domed 
when you take them out of the oven. Allow to sit 10 minutes 
before removing from the tins (and 20-30 minutes if you wish 

to remove from the liners without sticking).

 

Optional, Spread muffins with:
Healthy Vegan Cream Cheese
Makes 1 to 1-1/2 cups.
Mix Together
2 Tsp Agar Agar powder
1/4 cup hot boiled water

1 cup preferably coconut (or plant based) milk

Simmer while stirring steadily
for about 6 or 7 mins. until thickened.
Let cool in fridge about 20 mins. (don’t let it
get too thick, if you prefer it creamy),

Once set, take it out and whisk
it until it feels like cream cheese.
whisk it in a food processor
for creaminess or by hand
Then add
1 tsp lemon juice
1/2 tsp sea salt
1 Pinch raw sugar
Optional: 1/2 tbs. nutritional  yeast (For a more  savory flavor)

more savory flavor. (I like what it does.)

Mix thoroughly.NOTE: Add agar agar to the pan first

followed by hot water then coconut milk.
