Gluten-Free, Dairy-Free Quick Date-Nut Bread

Recipe
Made with oat flour, and sweet enough

with no refined sugar.

This goes together quickly and is so rewarding. It’s

a delicious dessert or treat anytime as is, or topped

with dairy-free whipped cream or cashew cream

cheese.

I used One Pullman Loaf pan (11x4x2 inches inside pan)

a bit more than half full, and had some leftover batter to

fill 5 muffin tin cups.  You may want to use two smaller pans

such as (8 x 4 x 2 inches inside pan).

 

Ingredients

1 cup unsweetened apple sauce

3/8 cup coconut oil or veg. oil

1 egg

1/4 cup sweetener (honey, date syrup, agave, etc)


1/4 cup chopped raisins


1/4 cup chopped dates


1/4 cup chopped walnuts

3/4 teaspoon cinnamon

1/4 teaspoon allspice

1/8 tsp cloves

1/8 teaspoon nutmeg

1/2 tsp vanilla

 3/4 cup gluten free all purpose blend w/xanthan

1 cup oat flour (I make it by grinding instant
or rolled oat cereal in the food processor).

1/4 teaspoon baking powder

1/4 teaspoon salt

1- baking soda

 


METHOD:


Preheat oven to 350. 
Grease and flour a loaf pan.


In a large bowl, stir together the applesauce,

coconut oil (measured when completely melted),

large egg, and vanilla extract. Stir until completely combined.

Sift flour and soda measure and sift again.

Give dates nuts and raisins a few pulses in food processor

Add the rest of ingredients to creamed mixture.

Add flour last.

Blend until batter is smooth.

Bake for 45 minutes to 1 hour or until toothpick comes out clean.
